Whole primals are sold by actual packaged weight. We confirm availability and final weight before fulfillment.

A lamb carcass is broken down into a smaller set of primals than beef — shoulder, rack, loin, leg, and the breast/shank section — each with its own texture and best cooking method. The shoulder and breast/shank carry more connective tissue and reward slow braising or roasting, while the rack and loin are naturally tender and better suited to quick, high-heat cooking. Buying a lamb primal whole is a good option if you want to portion your own chops from a rack or loin, or if you are cooking for a larger group and want the flexibility of a full leg or shoulder rather than pre-cut portions from our lamb cuts page.
