About Lamb Shoulder Primal
Lamb Shoulder Primal is offered by Laurel Highlands Farms as part of our Pennsylvania farm-direct primal cut program. Lamb Shoulder Primal from Laurel Highlands Farms
The lamb shoulder primal is a well-worked section with more connective tissue than the loin or rack, which makes it best suited to slow braising or roasting. Buying it whole lets you portion your own shoulder chops or roast the whole section for pulled lamb.
A whole shoulder primal is large enough to braise as a centerpiece roast for pulled lamb, or to be broken down into individual shoulder chops for grilling or braising. Because the shoulder has more connective tissue than the loin or rack, plan on several hours of low, slow cooking rather than a quick sear.
Buying directly from a farm is easier when product identity, price and use are clear. Consider how many people you are feeding, the cooking methods you use most often and how the item will fit into your meal planning. Our shop also includes related cuts, primals and specialty boxes so you can compare options without losing the connection to the farm.
Availability follows the realities of a working livestock farm. Add currently available products to your cart and confirm pickup or other fulfillment details during checkout or by contacting the farm. For more help choosing and cooking cuts, visit our beef and lamb guides.
Good to know
A primal is a large section of the carcass — it is how a butcher breaks down the animal before cutting steaks and roasts. Buying a primal gives you the most for your money per pound and lets you choose how it is portioned, whether you slice your own steaks, roast it whole or divide it with friends.
Because primals are large, plan freezer space and a clean work surface before they arrive, keep them cold, and portion into meal-sized packages before freezing. Questions about cutting or portioning? Call the farm at (412) 559-2320 and we will talk it through.
