Chuck Primal
Shoulder primal: chuck roasts, flat iron, Denver, stew and grind.
For chefs, serious home butchers, events and families who want more control over yield and cutting.

Every primal below is cut from our own Scottish Highland and Black Angus beef — shop straight off the chart butchers have used for a century. Choose grain-finished for classic marbled richness, or 100% grass-finished — pastured longer, leaner, and priced for the extra grazing time.

Primal cuts are the large sections a beef carcass is first broken into — chuck, rib, loin, sirloin, round, brisket, plate and flank — before a butcher works them down into the individual steaks and roasts sold on our beef cuts page. Buying a primal whole makes sense if you do your own butchering or cooking around a specific cut in bulk: a whole brisket for smoking, a chuck primal for a stock of roasts and stew meat, or a rib primal if you want to portion your own ribeye steaks and roasts. Each primal here is offered in both grass-finished and grain-finished form, so you can match the fat and flavor profile to how you plan to cook it.
