RAISED ON TWO FAMILY FARMS IN PENNSYLVANIA'S ALLEGHENY HIGHLANDS

Quarter, Half & Whole Beef

Stock the freezer once and eat from one pasture-raised animal for months. Custom cutting, vacuum packaging and clear pickup planning are part of the experience.

BEEF PRIMAL CUT CHART · FRONT QUARTER VS. HINDQUARTER

How a quarter, half & whole actually break down.

Every side of beef splits into a Front Quarter (chuck, rib, brisket, shank & plate — roughly 52% of the carcass, more roasts, braising cuts and ground beef) and a Hindquarter (round, sirloin, short loin & flank — roughly 48%, more steaks). A Half Beef is one full side of the animal — it already contains both the Front Quarter and the Hindquarter, so there is no front/back choice to make. A Whole Beef is both full sides, everything twice over.

A Quarter Beef is only one end of the animal, so that's the one share where you do choose: Front Quarter or Hindquarter, below.

2026 FREEZER BEEF

More beef. Better value.

Reserve your share with a deposit. Final weights vary by animal; the estimates below are designed to make freezer space and family budgeting easy.

How final pricing works: the reservation deposit holds your animal. The balance is based on the actual animal and processor yield, so the final invoice may move above or below the estimate. We confirm the expected range before processing, and the cut counts above are typical/illustrative — your final cut sheet with your processor sets the exact mix.
