The lamb rack primal is the source of rib chops and a whole rack of lamb. Buying it whole is the option to choose if you want to french the bones yourself and roast a full rack, or portion your own individual rib chops.
A whole rack primal usually covers enough ribs for a full rack of lamb to serve two to three people, or can be cut into individual rib chops for a larger group. Frenching the bones yourself — scraping the meat and fat from between them — gives the classic presentation without paying extra for a butcher to do it.
