About Chuck Primal — Grass-Finished

Chuck Primal — Grass-Finished is offered by Laurel Highlands Farms as part of our Pennsylvania farm-direct primal cut program. Chuck Primal, 100% grass-finished, from Laurel Highlands Farms

The chuck primal is the shoulder section of the animal, the source of chuck roast, flat iron, chuck eye and Denver steak among other cuts. A whole grass-finished chuck primal gives you the same range of cuts to portion yourself, with the leaner, more mineral-forward flavor typical of grass-finished beef.

Because a chuck primal includes several distinct muscles, portioning it yourself means you decide how much becomes roasts versus ground beef versus quick-cooking steaks like flat iron, tailoring the mix to how your household actually cooks.

Buying directly from a farm is easier when product identity, price and use are clear. Consider how many people you are feeding, the cooking methods you use most often and how the item will fit into your meal planning. Our shop also includes related cuts, primals and specialty boxes so you can compare options without losing the connection to the farm.

Availability follows the realities of a working livestock farm. Add currently available products to your cart and confirm pickup or other fulfillment details during checkout or by contacting the farm. For more help choosing and cooking cuts, visit our beef and lamb guides.

Good to know

A primal is a large section of the carcass — it is how a butcher breaks down the animal before cutting steaks and roasts. Buying a primal gives you the most for your money per pound and lets you choose how it is portioned, whether you slice your own steaks, roast it whole or divide it with friends.

Because primals are large, plan freezer space and a clean work surface before they arrive, keep them cold, and portion into meal-sized packages before freezing. Questions about cutting or portioning? Call the farm at (412) 559-2320 and we will talk it through.
