About Shoulder Roast

Shoulder Roast is offered by Laurel Highlands Farms as part of our Pennsylvania farm-direct lamb program. LAMB · per lb

Lamb shoulder roast is a classic braising cut, similar in structure to a beef chuck roast. Low, slow, moist cooking over a few hours breaks down the connective tissue and produces a tender roast that pulls apart easily, making it a good choice for pulled lamb.

A lamb shoulder roast typically weighs three to four pounds, enough to serve a family with leftovers. It is a good candidate for cooking a day ahead, since braised lamb often tastes even better once reheated. Adding root vegetables to the braising pot in the last hour of cooking lets them pick up flavor from the same liquid without turning to mush. Shredding the finished meat and returning it briefly to the reduced braising liquid before serving keeps it moist and well-seasoned.

Buying directly from a farm is easier when product identity, price and use are clear. Consider how many people you are feeding, the cooking methods you use most often and how the item will fit into your meal planning. Our shop also includes related cuts, primals and specialty boxes so you can compare options without losing the connection to the farm.

Availability follows the realities of a working livestock farm. Add currently available products to your cart and confirm pickup or other fulfillment details during checkout or by contacting the farm. For more help choosing and cooking cuts, visit our beef and lamb guides.

Good to know

Fresh lamb keeps best refrigerated at 40°F or below and should be cooked within a few days of thawing; for longer storage keep it frozen in the original vacuum packaging. Thaw slowly in the refrigerator on a tray and pat the meat dry before cooking for a better crust.

Pasture-raised lamb has a clean, mild flavor when it is not overcooked. Cook chops and racks quickly to medium-rare or medium, and give shoulder, shank and breast cuts the long, gentle heat that turns their connective tissue tender. Always rest the meat before carving.
