About Lamb Ribs

Lamb Ribs is offered by Laurel Highlands Farms as part of our Pennsylvania farm-direct lamb program. LAMB · per lb

Lamb ribs, sometimes called riblets, come from the breast and rib area and carry more fat than a rib chop. They respond well to the same low-and-slow approach used for pork ribs — a smoker or a covered oven roast — or a longer braise, either way finished with a flavorful glaze or sauce.

A rack of lamb ribs serves two to three people depending on appetite, since more of the weight is bone and fat compared with a leaner cut. A dry rub followed by low, slow heat gives the best result. Removing the thin membrane on the back of the rack before cooking helps seasoning and smoke penetrate the meat more evenly.

Buying directly from a farm is easier when product identity, price and use are clear. Consider how many people you are feeding, the cooking methods you use most often and how the item will fit into your meal planning. Our shop also includes related cuts, primals and specialty boxes so you can compare options without losing the connection to the farm.

Availability follows the realities of a working livestock farm. Add currently available products to your cart and confirm pickup or other fulfillment details during checkout or by contacting the farm. For more help choosing and cooking cuts, visit our beef and lamb guides.

Good to know

Fresh lamb keeps best refrigerated at 40°F or below and should be cooked within a few days of thawing; for longer storage keep it frozen in the original vacuum packaging. Thaw slowly in the refrigerator on a tray and pat the meat dry before cooking for a better crust.

Pasture-raised lamb has a clean, mild flavor when it is not overcooked. Cook chops and racks quickly to medium-rare or medium, and give shoulder, shank and breast cuts the long, gentle heat that turns their connective tissue tender. Always rest the meat before carving.
