About Lamb Neck

Lamb Neck is offered by Laurel Highlands Farms as part of our Pennsylvania farm-direct lamb program. LAMB · per lb

Lamb neck is a well-worked, bony cut with plenty of connective tissue, which makes it a natural fit for long, slow braising. It shows up often in stews, curries and tagines, where a few hours of gentle cooking turns it deeply flavorful and tender enough to fall off the bone.

Lamb neck is usually sold as cross-cut pieces with the bone in, similar in shape to a small shank. Two to three hours of gentle braising is typical before the meat is tender enough to pull easily from the bone. Leaving the bone in during the braise adds extra body and flavor to the finished sauce, so it is worth cooking bone-in rather than trimming it away first.

Buying directly from a farm is easier when product identity, price and use are clear. Consider how many people you are feeding, the cooking methods you use most often and how the item will fit into your meal planning. Our shop also includes related cuts, primals and specialty boxes so you can compare options without losing the connection to the farm.

Availability follows the realities of a working livestock farm. Add currently available products to your cart and confirm pickup or other fulfillment details during checkout or by contacting the farm. For more help choosing and cooking cuts, visit our beef and lamb guides.

Good to know

Fresh lamb keeps best refrigerated at 40°F or below and should be cooked within a few days of thawing; for longer storage keep it frozen in the original vacuum packaging. Thaw slowly in the refrigerator on a tray and pat the meat dry before cooking for a better crust.

Pasture-raised lamb has a clean, mild flavor when it is not overcooked. Cook chops and racks quickly to medium-rare or medium, and give shoulder, shank and breast cuts the long, gentle heat that turns their connective tissue tender. Always rest the meat before carving.
