About Lamb Kidney
Lamb Kidney is offered by Laurel Highlands Farms as part of our Pennsylvania farm-direct lamb program. LAMB · per lb
Lamb kidney is smaller and milder than beef kidney, and it cooks quickly — a fast sear or grill is usually enough once the central core and membrane are trimmed away. It is a traditional component of a British mixed grill alongside chops and sausage.
A few lamb kidneys make a single serving as part of a mixed grill alongside chops and sausage. Cook them quickly over high heat so they stay tender rather than becoming rubbery. Soaking briefly in milk or a light brine beforehand, as with beef kidney, mellows the flavor for those trying it for the first time. Serve slices warm right off the pan; kidneys firm up and lose some of their appeal if left to sit too long before eating.
Buying directly from a farm is easier when product identity, price and use are clear. Consider how many people you are feeding, the cooking methods you use most often and how the item will fit into your meal planning. Our shop also includes related cuts, primals and specialty boxes so you can compare options without losing the connection to the farm.
Availability follows the realities of a working livestock farm. Add currently available products to your cart and confirm pickup or other fulfillment details during checkout or by contacting the farm. For more help choosing and cooking cuts, visit our beef and lamb guides.
Good to know
Fresh lamb keeps best refrigerated at 40°F or below and should be cooked within a few days of thawing; for longer storage keep it frozen in the original vacuum packaging. Thaw slowly in the refrigerator on a tray and pat the meat dry before cooking for a better crust.
Pasture-raised lamb has a clean, mild flavor when it is not overcooked. Cook chops and racks quickly to medium-rare or medium, and give shoulder, shank and breast cuts the long, gentle heat that turns their connective tissue tender. Always rest the meat before carving.
